Paneer Tikka Masala: A Creamy Indian Delight

Ingredients
For the Paneer Marinade:
- 400g paneer, cut into cubes
- 150g thick yoghurt
- 1 tbsp ginger-garlic paste
- 1 tsp red chilli powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1 tbsp lemon juice
- Salt to taste
- 2 tbsp oil

- 3 tbsp butter or ghee
- 1 large onion, finely chopped
- 2 tsp ginger-garlic paste
- 4 large tomatoes, pureed
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp kasuri methi (dried fenugreek leaves)
- 150ml double cream
- 1 tbsp honey or sugar
- Salt to taste
- Fresh coriander for garnish
Method
Step 1: Marinate the Paneer
In a large bowl, mix together yoghurt, ginger-garlic paste, red chilli powder, garam masala, turmeric, lemon juice, and salt. Add the paneer cubes and gently coat them with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best results.
Step 2: Cook the Paneer
Heat 2 tbsp oil in a pan over medium-high heat. Add the marinated paneer cubes and cook until golden brown on all sides, about 2-3 minutes per side. Remove and set aside.
Step 3: Prepare the Gravy
In the same pan, melt the butter or ghee. Add the chopped onions and sauté until golden brown, about 5-7 minutes. Add ginger-garlic paste and cook for another minute until fragrant.

Add the tomato puree and cook for 8-10 minutes, stirring occasionally, until the oil begins to separate from the mixture. Add red chilli powder, coriander powder, turmeric, and salt. Cook for another 2 minutes.

Lower the heat and stir in the double cream, honey, and kasuri methi. Mix well and let it simmer for 3-4 minutes. Add the cooked paneer cubes and gently fold them into the gravy. Sprinkle garam masala on top.
Step 6: Serve
Garnish with fresh coriander leaves and a drizzle of cream. Serve hot with naan, roti, or basmati rice.
